Tatin Caramelised fennel

* 4 fresh fennel

* 3

orange juice and zest
* 1 tablespoon of syrup (maple, agave ...)
* 100 g margarine or olive oil
* 300 g puff pastry
* salt, pepper

Preparation: 20 min
Cooking time: 20 min

- Cut the orange zest into small cubes and let them blanch. Heat the pan with the fat and discard the fennel previously cut into slices. Fry them in ensuring they do not burn. The fennel will brown. Meanwhile, squeeze oranges. Add to pan the syrup and orange zest, mix well and sprinkle them orange juice. You have to let the juices reduce.
- Preheat oven 180 degrees. Unroll the puff pastry on a baking sheet and prick it. Bake the dough for 5 minutes.
